1 Hour Miracle Bread

10 1/2 c. white bread flour
1/2 c. sugar
1 T. salt
3 rounded tablespoons instant yeast
3 T. oil
4 c. hot tap water

Mix dry ingredients. Add oil and water. Mix for 1 minute and check consistency. If dough is too dry, add a little more water. Dough should be very sticky. Mix for 5 minutes. (Do not add flour to the dough after it has finished mixing.) Spray counter and pans with Pam. Shape loaves, place in pans and cover with a dish towel. Let rise 25 minutes. Bake at 350 degrees for 25 minutes.

Makes 4 loaves.

For whole wheat bread, use the same recipe only with whole wheat flour; replace one cup of the hot water with applesauce, and add 1 additional tablespoon oil. Mix for ten minutes.

Zucchini Bread

[zuch+bread+cr.jpg]
We have so much zucchini in our garden that we decided to try this recipe.  It is so "yummy" we have made it 2 times in the last 2 days.  Today we made it with 1/2 whole wheat flour and it was still delicious!

2 1/4 C flour
2 t cinnamon
1/8 t ground cloves
1/2 t salt
1 1/2 t baking soda
1/2 C canola oil
3/4 C granulated sugar
1/2 C brown sugar
3 eggs
2 t vanilla
1/2 C sour cream
3 C grated zucchini

Topping:
2 T white sugar
2 T brown sugar
1/2 t cinnamon
Preheat oven to 350 degrees. Grease and flour 2 loaf pans and set aside.

Combine flour, cinnamon, cloves, salt, and baking soda in a bowl and whisk to combine. Set aside.

Beat eggs, oil, sugars, and vanilla for about 30 seconds. Add sour cream and beat to combine. Mix in zucchini.

Add dry ingredients and mix just until combined. Divide batter between 2 pans. Bake for 50-60 minutes or until a knife comes out clean.

Make sure to let your loaf rest on a cooling rack for at least 10 minutes before you try to remove it from the pan or it will come out in chunks!

Ultimate Pizza Dough

2 tsp active dry yeast

1 cup warm water

1 tsp salt

3 cups whole wheat flour

1 to 2 Tbsp virgin olive oil

In the bowl of a food processor or electric mixer, dissolve the yeast in the water and let stand for 5 minutes. Add the salt, flour, and 1 tablespoon of olive oil and mix until the dough forms a ball’ if using a mixer, gradually add flour ½ cup at a time (if the mixture is hard to work add extra oil). Turn the dough out onto a surface dusted with flour or cornmeal and knead briefly until smooth. Lightly oil a medium-size mixing bowl and turn the dough in the bowl to coat. Cover with a damp dish towel or plastic wrap and let the dough rise in a warm, draft-free area for 1 to 2 hours, or until doubled in size. Punch down the dough and place it on a surface dusted with flour or cornmeal. Flatten it into a disk and divide it into four or eight equal portions with a knife or spatula. Roll out each portion, gently stretching it with your hands and set on a cookie sheet. Makes 4 12 inch crusts or 8 individual ones. Top the dough with your favorite toppings and cook at 450 degrees for 10-15 min, until cheese melts and crust is golden brown.
